Ingredient List
Gluten-free pancake mix (anything is good, but I like one that has rice flour)
Almond butter (or any oil you prefer)
Chocolate chips
Oat milk
Brown sugar
Matcha powder
Baking powder (or sparkling water)

Prep
Wet mix
Mix 1 cup of Almond butter
2 cups of Oat milk
Dry mix
2 cups Glueten-free hotcake mix
1 cup of Brown sugar
1 tsp of Baking powder
This makes about 18 muffins.
Cooking Instruction
Preheat the oven to 350°F
Get a bowl, and mix all the wet mix first
Put half of the dry mix and mix well
Put chocolate chip at the end
Get your muffin paper out and get them in the muffin pan
Distribute the muffin mix and bake for 20 minutes

Why choose a gluten-free pancake mix?
'Cuz it's eaaasy. If you prefer not to get pancake mix, you can also explore options like mixing rice flour and tapioca flour.
Choosing a gluten-free and dairy-free hotcake mix is a great option for those with dietary restrictions or food sensitivities. It allows you to enjoy delicious baked goods without compromising on taste or health.
Why go eggless and dairy-free?
You don't have to, but you get to. I like oat milk because it has a longer shelf-life. Whatever works for you should work just fine with this recipe.
I like almond butter because of the nutty flavor it adds to the muffin. But if you are allergic or are not into nutty flavors, you can alternative with coconut oil, sunflower seed butter, coconut butter, etc.
Tips
Real matcha is real expensive. If you want, you can alternate it with "easy matcha drink powder" that is essentially just sugar infused with matcha. And yes that stuff does not contain real matcha. But this stuff is inexpensive.
If you are using that kind of product, you can omit the sugar altogether.
